Later, this dish developed into a big dish at the banquet in Fuzhou folk. “Sa Zi” is the fried pasta that Manchu people are used to eating. It is crispy and delicious, and the fresh seafood soup that Fuzhou people like to drink has made this Manmin dish. & shy; In Huang Zuobin’s childhood memory, once he was unwell, his grandfather would bring a dish called “ramming fans” in Fuzhou to recuperate him. The smooth and delicious taste of this dish has always been remembered by him. He remembered that before the 1970 s, this was a delicious food made by every family in Fuzhou, but it was almost lost later. The chefs of Huang Yingbin and Antai Tower visited the folk old people with memories, and finally recovered the dish completely and named it “Phoenix fans”. This dish requires carefully mashing cooked fans and egg flower, and then mixing them into hot soup.
