In broad daylight, I went to a restaurant to eat rice noodles, but found that the store only sold steamed buns and soybean milk. Recently, some Fuzhou citizens found such a strange phenomenon. The restaurant that used to make rice noodles sold steamed buns and soybean milk in the morning and made midnight snack in the evening.
The reporter visited and learned that in order to cope with the high rent, two or three merchants joined hands to rent a store. In the morning, you make breakfast, and in the evening, he makes midnight snack, maximizing the use of the store, operating at the wrong peak, and lowering the cost. The rotation business model of many merchants in one store is quietly emerging in Fuzhou.
Three partnership rental stores take turns to reduce costs
“About 09:50 in the morning, I wanted to go to ‘Chen sanmian’ for dinner, but found that the store only sold steamed buns, soybean milk, etc.” Yesterday, Mr. Chen, a citizen, told the reporter that he usually went to this store. Recently, he found that the store not only made breakfast, but also made midnight snack. However, the rice noodles and noodles that were mainly operated in the store were originally, it is only available at noon and dinner.
“The store is nearly 60 square meters, and the monthly rent is close to 20,000 yuan.” Mr. Guo, the owner of the store, told the reporter that the store had been open for nearly half a year. When the business was very weak in the second half of last year, he felt that the monthly rent cost was too high and it was difficult to hold on, so there was the idea of finding someone to rent a shop together.
“We opened rice noodles store, and people in Fuzhou seldom eat rice noodles for breakfast.” Mr. Guo found that his store had a relatively high idle rate in the morning. However, some shops set up to make breakfast, operating steamed buns, soybean milk and so on. The business was good in the morning and the lunch and dinner were relatively light, which could complement each other. Therefore, he found a breakfast shop to cooperate, the two sides hit it off.
Later, Mr. Guo found that the shop was empty at night, so he introduced a night snack shop to take turns to open by contract system, “during breakfast and night snack, the rent accounted for 35%, the overall cost has been reduced a lot.” Mr. Guo said that the contract stipulated that each family should sort out clearly when collecting stalls, which would not affect the business of the next family.
Coincidentally, the reporter also found several restaurants near Qiantang Lane on Wah Lam Rd, extending the business hours significantly, and the business hours exceeded 18 hours a day. Therefore, the clerk was asked to work in three shifts.
Take turns to operate small catering new way out
The reporter noticed that at present, in Fuzhou market, the proportion of restaurants opened by multiple people in turn is still a minority. “In Taiwan, many shops in good areas are run by several people in turn. They sell breakfast in the morning, lunch and fruit at noon, and do midnight snack at night. They take turns to operate according to the time period, and they even changed the store recruitment in turn.” Ms. Yang, who once worked in Taiwan, told the reporter that she received a shop leaflet. When she was admiring her name, she often managed to find the right shop, but another shop was open. “The pressure on the rental cost of shops makes merchants try their best to reduce the cost.” A person from the catering industry in Fuzhou said.
Will it become a trend for a restaurant to take turns? Yesterday, Mr. Zhang, the chairman of a large chain catering brand, said that the rental pressure was indeed very high, accounting for 20% of the revenue, but the advantage of large catering was that the company had certain bargaining power in second-tier cities, lower the rent of first-tier cities, otherwise the rent will account for 40% to 50% of the revenue. “The average rent of a single restaurant cannot be achieved, depending on the way of taking turns to operate or a new way out”.
According to the report “the new trend of China’s catering industry in 2015”, the average profit rate of Fuzhou catering enterprises in 2015 was 3% ~ 5%, but the average profit rate in the first half of 2015 was less than 2.5%. During the 10 years from 2005 to 2015, among the operating costs of the catering industry, the rent increased the fastest, four or five times, and the rent even accounted for 50% of the revenue.
